Job Description

Overall

  • Support seniors in the daily operations of the work
  • Work according to the menu specifications by the seniors
  • Ensure the cleanliness and maintenance of all work stations, utensils and equipment
  • Assist in the preparation and service of all food items according to our recipes and standards
  • Put effort in optimizing the cooking process with attention to speed and quality
  • Ensure the consistent quality in daily preparation and keep up to date with the new products, recipe etc
  • Help to maintain a climate of smooth and friendly cooperation
  • Have full knowledge of all menu items, daily features and promotions
  • Follow kitchen policies, procedures and service standards
  • Follow all safety and sanitation policies when handling food and beverage
  • Other duties as assigned

Specific to COMMIS Chef I

  • Supervises and assigns duties to staff involved in the operation of the assigned work area, ensuring duties are carried out effectively. Performs as working supervisor, responsible for all food preparation and cooking in assigned area
  • Prepares requisitions for groceries and supplies on a daily basis, checking inventories and quality of all meats and grocery supplies received
  • Assists De Chef De Partie in menu planning, recipe standardization and development and product-testing
  • De Chef De Partie in performance appraisal of junior staff
  • Inspects and reports any faulty equipment to senior personnel

 Specific to COMMIS II

  • Support de Chef de Partie or Commis I in the daily operation and work
  • Work according to the menu specifications by de Chef de Partie
  • Prepare the daily mis-en-place and food production in different sections of the main kitchen or satellites
  • Follow the instructions and recommendations from the immediate Superiors to complete the daily tasks
  • Coordinate and participate with other sections of requirements, cleanliness, wastage and cost control

Specific to COMMIS III

  • Prepare fresh ingredients for cooking according to recipes/menu
  • Cook food and prepare top-quality menu items in a timely manner
  • Test foods to ensure proper preparation and temperature
  • Operate kitchen equipment safely and responsibly
  • Ensure the proper sanitation and cleanliness of surfaces and storage containers
