Job Description

Report to: General Manager

Position Description:

The Food & Beverage Manager efficiently manages all aspects of the F&B section including: Wireless Café operation, Chancery Cafeteria, external catering services and two coffee kiosks. This includes the effective financial management, costings and cash control as well as food preparation and kitchen management,food and beverage presentation, special events and external catering services, cafeteria service, catering service, supplier chain management and other duties as requested by the management.

Duties & Responsibilities:

1. Manage the financial performance of the F&B operations within AMA

  • Monitor sales reports on a weekly basis and manage menu and costings accordingly
  • Actively promote sales through merchandising and variable menu management for internal services and market external catering amongst the membership
  • Manage costing of all F&B services to ensure profitability of the section
  • Manage cash controls within the cashier teamincluding daily sales reports and cash deposits in liaison with finance and in accordance with financial policy

2. Manage Food and Beverage Services at two locations (Chancery & Phora Durbar)

  • Ensure that the kitchen, food service line and office area should keep neat, clean and 100% hygienic. Maintain daily checklists, ensuring standards meet clean and sanitary conditions as directed by the food service sanitation guide from the State Department.  
  • Manage regular and spot checks from Embassy Facilities and Health units
  • Provide innovative change and adaptation to the menu as necessary with relevant approvals
  • Ensure that food orders are correctly served and presented
  • Ensure that when new products/items are introduced, pricing and signage are visible and all staffs are well informed and aware of procedures for such an issue
  • External Catering co-ordination and handling including booking facilities support and drivers with the general services team
  • Handling guest complaints & suggestions taking timely and appropriate action
  • Manage third party suppliers of Coffee Kiosk services

3. Supervises all Phora Café Staff

  • Manage the performance cycle of F&B Staff  including up to date Job Descriptions, Personal Objectives and Goals setting and performance appraisals
  • Promote AMA values and ensure staff are aware of and adhere to all AMA polices 
  • Promote and coach excellent customer service skills
  • Prepare weekly duty roster of café staffs 
  • Maintain central attendance and leave records for F&B Staff

4. Supply Chain Management

  • Ensure ordering of supplies is efficient and well planned for all items required for F&B service
  • Manage supplier relationships to ensure AMA supply and payment terms are upheld
  • Keep accurate daily records of inventory consumption in conjunction with the Finance and inventory team
  • Responsible for daily snack/drinks inventory and accurate and timely reporting to Inventory Supervisor/Finance Manager
  • Ensure that stock/food item inventory is well managed, minimizing wastage and shortages

5. General

  • Implement all directives from the GM timely and efficiently and ensure that new ideas of policies are sustained
  • Performing other duties as assigned by the Manager

Skills and Experience:

  • Bachelor’s degree level qualification with 5 years of work experience in a relevant field OR over 10 years’ experience in a relevant field with significant vocational training and experience
  • Experience in restaurant management and/or senior F&B position within an international environment
  • Experience in customer services to International clients, preferably with experience of working overseas
  • Commercial awareness and understanding of financial management, including menu costings and catering pricing
  • Experience of F&B staff management, team leadership and human resource processes
  • Highly Competent in Microsoft Office applications
  • Fluency in written and vocal English language

Values and Characteristics:

The successful candidate will be responsible for the Food and Beverage at the major Recreation, Welfare and Commissary facility in Nepal for the International Community, on two sites: the US Embassy and Phora Durbar club site. As such they will be required to be:

  • Strong Team leader to manage a team of up to 25 staff members 
  • Interest and knowledge of menu design and innovative catering for international clientele
