Key Responsibilities:

Food Preparation & Quality

  • Ensure all food is prepared safely and hygienically, following standard recipes with proper portion control and minimal waste.
  • Maintain consistency in food quality, presentation, and creativity in menu development.
  • Implement and oversee quality control procedures across all food production areas.

Inventory & Equipment Management

  • Monitor food stock levels based on hotel needs and ensure proper storage and rotation.
  • Ensure kitchen equipment is used correctly, regularly cleaned, and maintained as per schedule.
  • Coordinate with Admin to plan and manage kitchen maintenance programs.

Staff Supervision & Development

  • Ensure staff meals meet quality standards and maintain a clean staff canteen.
  • Enforce grooming and uniform standards, conduct performance reviews, and support staff development and training.
  • Handle staff scheduling, recruitment, and team communication.

Operations & Compliance

  • Lead and execute F&B promotions, prepare monthly forecasts, and support team-building initiatives.
  • Ensure compliance with food safety and workplace health regulations.
  • Participate in the Hotel "Manager on Duty" program and attend required meetings.

Standards & Culture

  • Uphold hotel and corporate standards and promote a positive work environment.
  • Demonstrate and encourage a service-oriented mindset aligned with "The Power of Service."
